How to Make Pav Bhaji

Ingredients:

  • 4 medium-sized potatoes, boiled and mashed
  • 2 cups mixed vegetables (peas, carrots, beans, cauliflower, etc.), boiled and mashed
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green bell pepper (capsicum), finely chopped
  • 1 tsp ginger-garlic paste
  • 2-3 green chilies, finely chopped
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 2-3 tbsp butter
  • Pav (bread rolls)
  • Lemon wedges and chopped coriander leaves for garnish

Instructions:

  1. In a pan, heat butter and add chopped onions. Sauté until they turn translucent.
  2. Add ginger-garlic paste and green chilies, and sauté for a minute.
  3. Add chopped tomatoes and cook until they turn soft and mushy.
  4. Add all the spice powders – red chili powder, cumin powder, coriander powder, and garam masala powder, and salt to taste. Mix well and cook for a few minutes.
  5. Add the boiled and mashed potatoes and mixed vegetables. Mix well and mash the vegetables using a masher or the back of a spoon.
  6. Add water as needed to adjust the consistency of the curry. Mix well and cook for a few more minutes until the flavors are well combined.
  7. Toast the Pav bread rolls with butter on a hot tawa (griddle) until they turn golden brown.
  8. Serve the Pav Bhaji hot with a dollop of butter, lemon wedges, and chopped coriander leaves on top, along with the toasted Pav bread rolls.
